Carbs and FOOD!

In my previous post I mentioned that I was somehow worried about the amounts of carbs I have in my diet right now leading up to my competition. I have just been craving them lately, I am not sure if it’s because I know I can’t really go crazy and have as much as I want, or if my body really needs them. Well… I did add in some carbs last night in forms of CHICKPEAS! Here’s a photo of my dish with paprika dusted shrimp, onions, peppers, tomatoes, and chickpeas … before and after I dressed it up with fresh parsley! Delicious and quite low in calories despite my “naughty” addition of beans:

I DID have some veggies with it, although not my normal, humongous portion, because I’m trying to experiment with a little less fiber to try to deflate my puffy tummy. Here are my beautiful and delicious asparagus, which I just saute quick with spray, a little salt and pepper and then squeeze some fresh lemon on top right before serving:

And finally, what I cook for my CLIENTS, but what I absolutely cannot eat myself 😦 CRACKLING PORK!! hahahaha…

This will be slowly braised in the oven, low and slow, until it falls away from the bone and will be used for BBQ pulled pork sandwiches this weekend. Naughty and delicious – but not suitable for a contest diet (or any diet for that matter, ha!).  And no, I am not going to be eating any pulled pork sandwiches this weekend, but I will allow myself an extra few grams of carbs – my LAST ‘feast’ before the big day!
