I woke up to a gorgeous day this morning – gorgeous sunshine, clear blue skies and mild temperatures. What a blessing after all the snow and rain storms we’ve had this past month! My initial plan was to get up at 7 am and go for a run, but I have had an insane schedule the past week and my body was telling me to snooze for a little longer so that’s what I did. I got up at about 8:30am, had a nice breakfast of psyllium husk and oatbran cereal and half a banana with my reduced calorie skim milk, along with 3/4 cup of egg whites and 2 tbsp shredded parmesan – made into a nice egg white omelet. And black coffee of course! I had an errand to run in Beacon, and am now sitting at a cafe with open doors onto the street, responding to a few work emails and studying for my NASM PT certification… and thinking how lucky I am. While everyone around me is ordering big fat mocha lattes and cappuccinos, I am still drinking my black coffee (I would like to spend my calories elsewhere) but came across a recipe for a healthy coffee ‘cocktail’ that will also give you nutrients and is delicious! So here it is below – try it out and enjoy! (and p.s. I will still go for a run today, just a little later!)
3-4 ice cubes
8 oz. unsweetened soy milk
1 teaspoon instant coffee
1 Tablespoon cocoa powder
1 scoop unflavored whey protein powder
3 packets of vanilla flavored stevia OR 1/8 teaspoon stevia powder and 1 teaspoon vanilla extract
Optional: a sprinkle of cinnamon
Mix everything in a blender and enjoy!
